Is it possible to undelete by mistake deleted contacts? I can’t find the undelete option.

no… for gurus : if your address book is remote, stop Thunderbird, then find the CardBook indexedDB database in your Thunderbird profile, then find in the DB your contact and remove the deleted status (only if a sync hasn’t happen after the deletion)
